Red Wine Reduction with pure Licorice

Licorice is often seen as the one thing that clearly divides the human race into two types: those who love it and those who hate it. Bipartisan palates seem unknown. I always found myself in the second group. Only the bats from Haribo became a favorite product when my loved one introduced them to me. It is no wonder – no less than three hundred kinds are known to man.

A couple of days ago I was shown what seemed to be dried twigs and it did not last long until these would also become an important fraction of my latest coffee-pairing. These were in fact roots, known as sweet root, licorice root, licorice, gan zao, black sugar, sweet wood, sweet stalk, reglissa, lukrecja, alcaçuz, mulethi or lakritz. Botanically known as Glycyrrhiza glabra linaeus, this sweet root is not to be confused with the sweet root known as sweet flag, botanically the Acorus calamus linnaeus.

Known since the 13th century for its use as medicine to Asians, Egyptians, Greeks and Romans, it might just be the oldest candy known to humans. It has its origin in areas of the Mediterranean, in the European south, as well as in parts of Asia. But even today, throughout Japan it finds use in the treatment of chronic viral hepatitis.

Having one of these roots in my hand, I started my perception tour by putting one under my nostrils and the connection to anise was immediate. In its industrial usage, licorice is often diluted with anise seed oils, what reduces its production costs. The second perception – sweetness – came after scratching on it and grinding it with a fine grater. This is a very different sweetness to that of the sugar cane or sugar beet, but just as sweet to the tongue, although with less of the sugar intensity known from brown sugar. It contains, however, almost no fat.

In my initial usage of this root, the bottom line was not the world of coffee per se, but the one of wine reductions – precisely the reds. Experienced individuals in the fields of chemistry and candy technology working with sweet root have come up with a great variety of uses, tastes and forms. Through my first try I see why. While reducing the wine, much more than taste development took place. At the end there was not only the density and residue I know from reducing wine, sugar and cinnamon, but there were some crystals and a sensation of having the tongue a bit tightened/twisted. Therefore, for the sake of a pleasant texture, but also to avoid a too intense licorice flavor, make sure you start with caution. The grated root looks like a gentle white powder, thanks to its soft yellowish hue, but it could work intense wonders.

I suggest a reduction using the following ingredients:

  • 1 liter red wine
  • 4 spoons of brown sugar (try what works best for you – remember the sweet root is sweet)
  • 1 coffee spoon sweet root (finely ground)
  • 2 coffee spoons ground coffee
  • small piece of cinnamon (not ground)
  • 3 apples

Prepare all the ingredients and put them in a pot that is high but not too big. The goal is to have a pot that keeps the liquid high enough to cover most of the apples. While cooking, keep pouring the fluid over the apples regularly and every 10 or 15 minutes turn the apples upside down and down side up alternately.

Peptic ulcers are sores or eroded areas that form in the lining of the esophagus, stomach or small intestine. Ulcers that occur in the stomach are known as gastric ulcers. Ulcers occurring in the duodenum (the beginning of the small intestine) are known as duodenal ulcers. Peptic ulcer disease, in which remissions and exacerbations of ulcers occur, represents a chronic health problem.
Signs and Symptoms
Some individuals with peptic ulcers don’t experience any symptoms, while others experience varying amounts of pain. The pain associated with an ulcer may:
• Be described as dull and gnawing, or burning and crampy
• Come and go, for several days or weeks
• Occur two to three hours after eating
• Occur in the middle of the night
• Be relieved by food (e.g. milk)
Other symptoms include weight loss, poor appetite, bloating, burping, nausea and vomiting.
Causes
Most peptic ulcers are known to be caused by a bacterial infection. Helicobacter pylori (H. pylori) is the bacteria implicated in the vast majority of cases. Use of over-the-counter and prescription painkillers known as non-steroidal anti-inflammatory drugs (NSAIDs) can also cause peptic ulcers. Other medications are currently being studied for their role in peptic ulcer development.
DGL: A Natural Solution
An extremely effective natural supplement for ulcers is a form of licorice root that has been specially processed. Deglycyrrhizinated licorice (DGL) is an important component of a complementary natural health approach – and clinical studies prove it works!
DGL is a special extract of licorice from which the glycyrrhizin molecules have been removed, leaving biologically active flavonoids. The value of DGL over other forms of licorice is that it eliminates adverse effects associated with long-term use of very high doses of conventional licorice (including sodium and water retention, high blood pressure and low potassium levels.). Licorice root extract stimulates the release of secretin, which has a protective effect on the gastric mucosa. The body’s production of secretin by such natural agents may play a significant role in their mucosal protective action. In fact, researchers attribute the anti-ulcer effect of licorice root extract to its unique ability to stimulate the body to release endogenous secretin, which helps to rebuild the stomach or intestine’s protective lining.
Use of DGL addresses the underlying factors and promotes true healing by stimulating the normal defense mechanisms that prevent ulcer formation. Specifically, DGL improves both the quality and quantity of the protective substances that line the intestinal tract.
Taking DGL
Look for a chewable form of DGL, as its ingredients should mix with saliva to promote release of compounds that stimulate the growth and regeneration of stomach and intestinal cells.

For treatment of peptic ulcers, take 760 to 1,520 mg of DGL (or 400 mg of an extra-strength extract) between, or 20 minutes before, meals. Use for eight to 16 weeks, or as recommended by your health care professional.

Pharmaceutical Microbiology: Licorice root and oral infections

Research published in American Chemical Society's Journal of Natural Products suggest that licorice root may have properties which help to fight oral infections (tooth decay and gum disease).

The research found that two of the licorice compounds, licoricidin and licorisoflavan A, were the most effective antibacterial substances. These substances killed two of the major bacteria responsible for dental cavities and two of the bacteria that promote gum disease. One of the compounds -- licoricidin -- also killed a third gum disease bacterium. The researchers say that these substances could treat or even prevent oral infections.

Jing Herbs Hepapack | Vegan Kingdom

Firstly i just want to say sorry for not updating the site with new blog posts sooner, things have been really busy but i have some more articles and posts on the way soon. Recently i have been testing a whole load of new products for our store over at Amla and one in particular that i really rate is the Hepa Pack by Jing Herbs.

The Hepa Pack is a 3 Phase liver support and detoxification supplement and the supplement is very well formulated. One ingredient in particular that i am impressed with is that they have used Chinese Licorice Root rather than the American species(G.Glabra) the latter which is stimulating, whilst the Chinese species is calming. I do not tolerate the American variety(G.Glabra)  i find it makes me edgy and panicky, so i often have to mix and formulate my own herbs as many Ayurvedic and Traditional Chinese formulas contain the American Licorice root.

Now that im a herb fanatic i love to look at various formulations and personally cannot see any fault with the Hepa Pack formulation. It would be cool if they offered the product as a powder also so that you could get the bitter benefits which also aid digestion and liver cleansing. I usually just empty the capsules into a little water so i can get the bitter effect from the herbs such as schizandra and bupleurum root.

The Hepa Pack contains a variety of different herbs and compounds all of which have various effects on the liver such as speeding up regeneration of new liver cells(milk thistle & schizandra), cleansing the liver(Bupleurum root & others), increasing the master antioxidant gluthathione(N-Acetyl-Cysteine), increasing the production of bile(Turmeric & Others), antioxidant and hepato-protective.

The great bonus is that the herbs in the formula all have secondary benefits for example Schizandra, Chinese Licorice Root and Astragalus are adaptogens which help increase the bodies resistance to stress. Many of the herbs either have direct anti-inflammatory properties such as Turmeric root or support the adrenal glands which produce the bodies own natural anti-inflammatory steriod hormones.

Anyway back onto why i am using the Hepa Pack, i like to support my liver at least twice a year. I had a past history of overindulgence in junk food and heavy alcohol use so at one point my liver function was very poor until i was introduced to liver support and bitter herbs such as in this formula. The liver is an extremely important and ignored organ when it comes to many stubborn health ailments. Modern testing is also not always accurate, liver enzyme tests are for checking damage to the liver not how well it is functioning.

The liver is a very emotion sensitive organ and i believe chronic stress is what initially slowed down my liver function and created alot of horrible symptoms such as acne, adrenal fatigue, hormonal imbalances such as estrogen dominance which then creates other problems such as low thyroid, low libido, poor energy levels and much more. After suffering from severe adrenal fatigue and multiple other health problems i like to support my body in times of stress i usually do this with the use of adaptogenic herbs(some are in the hepapack formula such as schizandra, chinese licorice and astragalus) and liver herbs. Obviously a high nutrient diet to replace the nutrients you’re body is using up during stress is essential also.
